4-6 Idaho potatoes
Canola oil for frying
Salt & pepper for seasoning
1) Cut potatoes into fries. Rinse under cold water to remove starch, dry with paper towels
2) Fry them at 250-275 degree oil until soft and tender. Remove from fryer and chill them in the fridge
3) Fry them in 350-375 degree oil until nice and golden brown. Season with salt & pepper immediately
