1.5 cup EVOO
3/4 cup red wine vinegar
2 TBSP dijon mustard
2 medium red onions quartered
6 cloves garlic chopped
Salt & pepper
1. Preheat oven to 400
2. Put red onions and garlic in a hot saute pan with EVOO for a few minutes. Place into the oven for 15 minutes until nice and charred
3. Once the onions & garlic are done, season with salt & pepper and let cool. Puree all ingredients together. Adjust for seasoning and store in an airtight container
