Zucchini sliced
Crumbled feta
Toasted pistachios
Mint
Chili flakes
EVOO
Aged balsamic
Roasted peppers diced
Salt & pepper to taste
1) Slice zucchini. Drizzle with EVOO, salt & pepper on both sides
2) Grill on both sides
3) Top with roasted peppers, toasted pistachios, crumbled feta cheese, fresh mint, EVOO, balsamic vinegar, and black pepper
